High touch means a very involved level of customer service, usually face-to-face. Typically, high touch service situations are more expensive purchases like a car.

For example, an entrepreneur pitching to venture capitalists might say, “Our consumers are going to be writing checks for $25,000 just to get in the door. Because of that, we plan to offer very high touch customer service with the best sales professionals in the business.”
